
Though I rarely cook, I thought I would give this dish a try. I have to admit the Mexican food lover I am is what forced me into making it. It is super simple to make and delicious!! Thanks Target brand cheese package for the recipe hehe.
1 lb of lean beef
1 bag of cheese (I prefer the Mexican style blend)
2 10oz cans of red enchilada sauce
1 can of green chiles (I made mine without)
1 package of corn tortillas cut in half
Directions:
Brown the ground beef on medium heat, when meat is cooked, add 1 can of enchilada sauce.
In a casserole dish, pour in half can of enchilada sauce on bottom, add a layer of tortillas then pour over a spoonful of meat evenly and add 1 cup of cheese. Continue adding layers until you reach the top of the dish. Then put the remaining tortillas on the top and pour the rest of the enchilada sauce on top. Cover with foil and bake in oven at 350 degrees for 20-25 minutes.
After 20-25 minutes or until heated thoroughly remove and sprinkle one last cup of cheese on top and bake for an additional 5 minutes uncovered.
Then remove dish and serve.

ReplyDeleteJesse made that for dinner tonight, it was very good, I asked her to put green chili's in the 2nd pan, but she forgot!!! We all loved it and I will be making that again!!!
